Wild Irish Rose

My first cocktail by Dead Rabbit, the Wild Irish Rose:

cocktail

  • 0.75 ounce Pomegranate Syrup
  • 1.00 ounce Connemara Peated Single Malt Irish Whiskey
  • 1.00 ounce Laird’s Applejack Bonded Proof
  • 1.00 ounce Pama Pomegranate Liqueur
  • 0.75 ounce fresh lemon juice
  • 3 dashes Bittermens Burlesque Bitters
  • 3 dashes Pernod Absinthe
  • 1 large egg white

Pre-chill a punch glass. Add all the ingredients to a shaker. Fill with ice and shake. Strain into the punch glass.

The Modernista

Another rare Scotch-based cocktail, The Modernista:

cocktail

  • 2.0 ounces Scotch
  • 0.5 ounce dark Jamaican rum
  • 1 teaspoon absinthe or pastis (Pernod, Herbsaint and Ricard all work.)
  • 0.5 ounce Swedish Punsch
  • 0.5 ounce fresh lemon juice
  • 2 dashes orange bitters

Shake in an iced cocktail shaker, and strain into a cocktail glass. Add a lemon twist.

This is Dr. Cocktail’s name for The Modern cocktail, and the references I’ve found in the intertoobz all have Scotch, pastis or absinthe, and orange bitters in common, but in vastly different proportions. A couple include sloe gin. The drink is supposed to have originated just after the turn of the century (1900, not 2000), hence the name.

The Monkey Gland

No classic cocktail book (or blog) would be complete without The Monkey Gland:

cocktail

  • 1.5 ounces dry gin
  • 1.5 ounces orange juice
  • 1 teaspoon pomegranate grenadine
  • 1 teaspoon absinthe or pastis

Shake vigorously in an iced cocktail shaker, and strain into a small cocktail glass.

It’s funny in that Dr. Cocktail basically devoted a single sentence to The Blinker but this cocktail rates pages of description. There is a good reason for it – the story behind the name of this drink is pretty unbelievable.
